Ingredients
• 3 ripe avocados
• 1 medium onion finely chopped
• 1 clove garlic
• 1tsp cooking oil
• 1 cup washed and chopped cilantro, loosely packed
• 1 lime
• ½ tsp salt, or more to your taste
• 1 jalapeno finely chopped
Optional:
• 1-2 roma tomatoes, seeded and diced
Directions
Mince the garlic and fry in some oil until just soft and lightly cooked, be careful it burns easily
Cut avocado in half , remove the pit and spoon out the avocado into a bowl
Add the garlic, onion, jalapeno, and salt to the bowl of avocado.
Cut lime in half and squeeze over the ingredients in the bowl. If lime is really juicy you may only need half of it.
Mash and mix together all of the ingredients
Gently mix in the cilantro. This is the point that you would add the optional tomatoes if you are going to use any in your guacamole
Serve immediately with tortilla chips
Tip for selecting an avocado ready for your guacamole:
Pick avocados that are turning black from green or have gone completely black. Colours can vary though. It should feel firm but have a little softness to it, if it is hard as a rock it isn’t ready! If your fingers sink in, it is over ripe and not useful.
